We’ve got lots going on with our Scratch Series this month! Scratch #320 is our latest effort to bring body to a lower-alcohol IPA without compromising aroma or flavor. With a winning combination of Azacca, Centennial, Chinook, and Comet hops, we upped the amount of unfermentable sugars even more for additional silkiness and smooth texture.

The impetus of Scratch #319 comes from one of our brewer’s homebrew recipes for a traditional German-style Festbier, or “Märzen” (German for “March”) lager. Brewed using a conventional technique of boiling the mash to introduce robust caramel flavors, our take on this timeless style is full-bodied and rich with plenty of toasty and sweet malty goodness you’d expect to find in a Fest lager.

Walking the fields during hop harvest, we were captivated by an intensely citrusy row called “Lemondrop.” Scratch #318 continues our focus on this lively hop boasting notes of lemon rind. For this version, we dropped the Caliente hops to allow tried-and-true Centennial to deliver some good old-fashioned citrus and intensify the lemon character. This is the latest of a few Double IPAs we plan to brew with Lemondrop to see how different malts and hops bring out its subtleties.

For Scratch #316, our latest take on a boysenberry gose, we upped the fruit character and tartness with more boysenberries — a cross between a blackberry and a raspberry. The blackberry notes add a deep red grape-like juiciness, while the raspberry character adds a sweet-and-tangy pop. A hint of salt adds texture and helps pull through the berry goodness.

Not too long ago, we got a taste of some two-row barley grown about a half hour away in Mount Joy. It wasn’t just local, it was amazing, and we hatched a plan to brew a PA-centric take on our cult classic Troegenator. The combination of Double Eagle’s barley and caramel rye gives “PA Nator” a deep, port-like maltiness and chewy body, and Cascade hops from Sunny Brae in Carlisle add subtle pine notes.

Scratch #311 celebrates “Metal Brewer,” our Tröegs co-worker homebrew competition. Last year’s winning recipe, a Sangria-inspired IPA highlighting the Amarillo hop, wowed judges and attendees alike with its mélange of fresh fruit, maraschino cherries soaked in spiced rum, and toasted oak spirals saturated with Carménère, a dry red Chilean wine. Heavy-handed hopping with Amarillo provides an explosive grapefruit conclusion to this refreshing, fruity IPA.
