The Bruery Unveils Three New 2026 Barrel-Aged Beers
The Bruery is continuing to build an impressive 2026 lineup with three very different barrel-aged beers headed to bottles from its Placentia, California brewery. The new releases showcase three distinctly different sides of the brewery, ranging from an enormous Bourbon barrel-aged barleywine to a nearly 20% ABV American whiskey barrel-aged imperial stout and a considerably lighter, dessert-inspired sour ale.
The three new beers are Vanilla Volley, The Malt Mill, and Island Meringue, and together they demonstrate just how wide-ranging The Bruery’s barrel-aging program has become. Vanilla Volley combines a massive barleywine base with vanilla beans and Four Roses bourbon barrels, while The Malt Mill takes an imperial stout into Westward Whiskey American Single Malt Whiskey barrels. Island Meringue takes an entirely different path, pairing a sour blonde ale with coconut, vanilla marshmallow fluff, vanilla, and graham cracker flavors.
All three beers will arrive in 12.7-ounce bottles, giving collectors and fans another trio of highly distinctive The Bruery releases to watch for during the 2026 beer season. With alcohol levels ranging from a relatively approachable 5.7% ABV to a staggering 19.7% ABV, this lineup offers something for several different barrel-aged beer preferences.
Vanilla Volley – 15.7% ABV
Vanilla Volley is a Bourbon barrel-aged barleywine ale with vanilla beans, and at 15.7% ABV, this is clearly designed for fans of big, rich, and complex beers.
According to the label, the beer brings together vanilla sourced from Madagascar, Uganda, Ecuador and Congo before being aged in Four Roses bourbon barrels. The resulting profile is described with notes of toffee, oak and big vanilla character, backed by toasted caramel and marshmallow sweetness.
The beer pours into the territory of a classic after-dinner sipper, with a deep brown appearance and a smooth, dessert-like character. The label recommends enjoying it with sticky toffee pudding, making Vanilla Volley an especially interesting choice for pairing with rich desserts.
The Malt Mill – 19.7% ABV
If you’re looking for the heavyweight of the trio, The Malt Mill is it.
This American Whiskey barrel-aged imperial stout reaches an extraordinary 19.7% ABV and was aged in Westward Whiskey American Single Malt Whiskey barrels. The label describes aromas of charred peaches, molasses, and dark chocolate, followed by flavors of chocolate lava cake, fruit leather, and waffle cone.
The result is intended to be a full-bodied, decadent imperial stout with a long, rich finish. At nearly 20% ABV, The Malt Mill is firmly in the category of beers meant to be slowly enjoyed rather than quickly consumed.

Island Meringue – 5.7% ABV
At the opposite end of the alcohol spectrum is Island Meringue, a barrel-aged sour blonde ale coming in at just 5.7% ABV.
This release takes a decidedly tropical and dessert-inspired approach, combining coconut, vanilla marshmallow fluff, vanilla, and graham cracker flavor. The label describes aromas of creamy vanilla, coconut, and toasted caramel, with coconut and toasted graham cracker flavors balanced by gentle tartness.
The beer is described as rich and medium-bodied despite its relatively modest alcohol level, with a long finish. The label specifically suggests pairing Island Meringue with coconut shrimp or blackened fish tacos, making this the most food-friendly and approachable beer of the three.
Three Very Different Takes on Barrel Aging
What makes this trio particularly interesting is the contrast between the beers. Vanilla Volley pushes barleywine into rich Bourbon-and-vanilla dessert territory. The Malt Mill goes bigger and darker with an almost 20% ABV imperial stout and American single malt whiskey barrel character. Island Meringue moves in the opposite direction, using a sour blonde ale as the foundation for a tropical dessert-inspired beer.
The Bruery has been particularly active with barrel-aged releases throughout 2026, including new Black Tuesday variants, barrel-aged ales and additional specialty releases.
