Today brings big news for fans of Southern Grace Distilleries and their acclaimed Conviction Bourbon series. The North Carolina distillery is preparing to debut a remarkable new expression: Conviction Bottled in Bond 7‑Year Unfiltered Sour Mash Straight Bourbon Whiskey, bottled at a federally certified 50% ABV (100 proof) and released in 750ml bottles.

This release represents a major milestone for Southern Grace, showcasing the distillery’s commitment to long‑term barrel aging, traditional sour‑mash methods, and the strict standards required for Bottled‑in‑Bond designation. With a full seven years in the barrel—an impressive age statement for a craft distillery, this bourbon promises depth, structure, and the kind of mature flavor profile that bourbon collectors and whiskey enthusiasts actively seek out.

A True Bottled‑in‑Bond Bourbon

To earn the Bottled‑in‑Bond label, a whiskey must meet some of the most rigorous standards in American spirits:

  • Distilled in one distilling season
  • By one distiller
  • At one distillery
  • Aged a minimum of four years in a federally bonded warehouse
  • Bottled at exactly 100 proof (50% ABV)

Southern Grace Distilleries not only meets these requirements, they exceed them with a 7‑year age statement and an unfiltered presentation that preserves the bourbon’s natural character, oils, and complexity.

Unfiltered Sour Mash: A Flavor‑Forward Approach

The use of an unfiltered sour mash process adds another layer of authenticity and intensity. Sour mash fermentation helps maintain consistency from batch to batch, while the unfiltered bottling ensures that the whiskey retains:

  • Full‑bodied mouthfeel
  • Rich barrel oils
  • Deep caramel and vanilla tones
  • Natural color and texture
  • A more robust finish

This is the kind of bourbon that appeals to purists, drinkers who want the whiskey exactly as it came from the barrel, without chill‑filtration or flavor stripping.

What to Expect From Conviction Bottled‑in‑Bond 7‑Year Bourbon

While official tasting notes are still forthcoming, the profile of a 7‑year unfiltered sour mash bourbon typically includes:

  • Aroma: Toasted oak, caramelized sugar, warm spice, and deep vanilla
  • Palate: Rich caramel, dark fruit, baking spice, charred oak, and a bold grain backbone
  • Finish: Long, warm, and layered with oak tannin, spice, and lingering sweetness
  • Proof: 100 proof (50% ABV), offering structure without overwhelming heat

Given Southern Grace’s track record with the Conviction line, this release is poised to deliver a mature, balanced, and flavor‑dense bourbon experience.

A Standout in the Conviction Lineup

The Conviction series has earned a loyal following for its bold flavors and meticulous craftsmanship. This new 7‑year Bottled‑in‑Bond expression elevates the brand even further, offering:

  • A rare age statement for a craft distillery
  • A legally protected Bottled‑in‑Bond designation
  • An unfiltered presentation for maximum flavor
  • A high‑proof structure ideal for sipping or cocktails

Collectors, bourbon hunters, and fans of Southern Grace Distilleries will want to keep a close eye on this release.

Packaging & Availability

The whiskey will arrive in 750ml bottles, maintaining the clean, classic Conviction aesthetic. At 50% ABV, it fits squarely into the Bottled‑in‑Bond category and stands out as one of the most mature and robust offerings in Southern Grace’s portfolio.

Release timing, distribution details, and tasting notes are expected soon, and this is shaping up to be one of the most anticipated craft bourbon releases of 2026.

About Southern Grace Distilleries Conviction:

Conviction Bourbon, produced by North Carolina’s Southern Grace Distilleries, is a craft, cask-strength, small-batch bourbon aged in a former 1929 prison dormitory dubbed “Whiskey Prison”. Known for its high-corn mash bill (88% corn, 12% malted barley), it is acclaimed for a deep, rich flavor profile with notes of vanilla, caramel, and baking spices.

Key Details About Conviction Bourbon:

  • Production & Aging: It is a “grain-to-glass” product, aged for four to six years in a decommissioned prison.
  • Flavor Profile: Generally described as having a dark, caramel-forward nose with a syrupy, oily mouthfeel and a smooth, sweet, and dry finish.
  • Proof: Usually bottled at cask strength (varies, often around 101–105 proof).
  • Varieties: In addition to their standard offering, they produce a “1929 Double Oak” and “Founder’s Reserve”.
  • Awards: The bourbon has earned accolades such as a Gold Medal at the MicroLiquor Spirit Awards and Best Bourbon at the New Orleans Bourbon Festival.

Conviction Double Oak 1929

  • Process: Utilizes two new charred barrels for both initial and secondary aging.
  • Tasting Notes: Features notes of dark chocolate, cherry, raw honey, and apple.
  • Proof: Often bottled around 101.4 proof (50.7% ABV).

The distillery, which was founded in 2014, has established a reputation for producing high-quality, craft spirits in a unique, historic setting.
