Conviction Bourbon, produced by North Carolina’s Southern Grace Distilleries, is a craft, cask-strength, small-batch bourbon aged in a former 1929 prison dormitory dubbed “Whiskey Prison”. Known for its high-corn mash bill (88% corn, 12% malted barley), it is acclaimed for a deep, rich flavor profile with notes of vanilla, caramel, and baking spices.

  • Production & Aging: It is a “grain-to-glass” product, aged for four to six years in a decommissioned prison.
  • Flavor Profile: Generally described as having a dark, caramel-forward nose with a syrupy, oily mouthfeel and a smooth, sweet, and dry finish.
  • Proof: Usually bottled at cask strength (varies, often around 101–105 proof).
  • Varieties: In addition to their standard offering, they produce a “1929 Double Oak” and “Founder’s Reserve”.
