Redbreast 27 Year Single Pot Still Irish Whiskey is a rare and luxurious expression that represents the pinnacle of the Redbreast range. Bottled at a natural cask strength of 53.3% ABV and presented in 700ml bottles, this whiskey showcases the depth and complexity that only extended maturation can achieve. Crafted using the traditional single pot still method and aged for nearly three decades in a combination of bourbon, sherry, and ruby port casks, it delivers an exceptionally rich and layered profile that speaks to both heritage and craftsmanship.

Redbreast Irish Whiskey is the world’s most awarded and largest-selling single pot still Irish whiskey, celebrated for its rich, full-bodied, and complex flavor profile resulting from a unique mash bill and maturation process in both ex-bourbon and ex-sherry casks. 

Production and History
Redbreast whiskey is a definitive example of the traditional Irish single pot still method.
Mash Bill: The whiskey is made from a combination of both malted and unmalted barley, a practice that originally helped Irish distillers avoid an English tax on malted barley in the 1800s. This blend contributes to its characteristic creamy mouthfeel and spicy notes.

Distillation: The spirit is triple-distilled in traditional copper pot stills at the New Midleton Distillery in County Cork, a process that ensures a smooth and refined spirit while retaining a robust character.
Maturation: The whiskey is matured in a combination of ex-American bourbon barrels and Spanish Oloroso sherry butts. The sherry cask influence is a signature of Redbreast, imparting deep notes of dried fruit and nutty sweetness.

Heritage: Originally a “bonder brand” bottled by the Dublin spirits merchant W&A Gilbey using distillate from the Jameson Bow Street Distillery, Redbreast was named in reference to the chairman’s favorite bird, the robin redbreast. Irish Distillers acquired the brand in the 1980s and re-launched it in 1991.

Core Expressions and Flavor Profiles

The Redbreast family includes a range of expressions, each offering a unique take on the signature single pot still style.

Redbreast 12 Year Old Cask Strength: A more intense, non-chill filtered version of the 12-year-old, offering a glimpse of the full-flavor profile directly from the barrel, with vibrant fruit and citrus notes.

Redbreast 15 Year Old: Aged for an additional three years, this expression offers deeper complexity with enhanced notes of dark chocolate, berries, and aromatic oils. It has been highly acclaimed, including being named “Irish Whiskey of the Year” by Jim Murray’s Whisky Bible.

Redbreast Lustau Edition: This expression is finished for one year in first-fill sherry butts seasoned with Bodegas Lustau sherry, resulting in a slightly drier, richer, and more structured profile.

Redbreast 21 Year Old: Produced in limited quantities, this deep and luxurious whiskey has notes of tropical fruit, caramel, and earthy nutmeg. It is known for its incredible complexity and silky mouthfeel.

Redbreast 27 Year Old: The oldest permanent release, matured in bourbon, sherry, and unique ruby port casks, lending notes of fleshy red berries, plum, and rich tobacco to its complex profile.
