This morning brings an exciting first look at a brand‑new addition to the 2026 Barrel House Series from Goose Island Beer Co. in Chicago, Illinois. The brewery is preparing to release Xocolatl, a bourbon barrel‑aged stout inspired by the deep culinary traditions of Mexican chocolate sauces. The name Xocolatl traces back to the ancient Nahuatl word for chocolate and evokes the rich, complex flavors found in traditional Mexican mole, where cocoa, chiles, spices and roasted ingredients combine to create layered depth. Goose Island is channeling that heritage into a modern barrel‑aged stout built for collectors and fans of bold, expressive flavors.

Xocolatl is crafted as a bourbon barrel‑aged stout with cinnamon, cocoa nibs and Guajillo chile, creating a fusion of chocolate richness, warm spice and subtle heat. The Guajillo chile contributes a gentle fruit‑forward warmth rather than intense heat, adding depth and authenticity to the stout’s flavor profile.
