Council Brewing Releases Les Saisons Barrel Aged Dry-Hopped Rustic Saison

Beer Description: This the first release of our barrel aged Les Saisons series, where we will be using strains of Brettanomyces and different hop varieties to incorporate the essence of the season. For our Spring 2016 release, we used East Kent Goldings and Hallertau Blanc hops to bring a fresh floral note. The combination of the French oak barrels and yeast provide an earthy wine character and a dry finish. Pour into a tulip glass and allow plenty of space for the foam to grow and release its bouquet.

Brewer’s Notes: “We didn’t want this beer quite as tart as Nicene (still a splash to add a crisp note) and wanted it more in line with the profile of rustic European Saisons being brewed today.” Learn how our Barrel Program Director, “The Wild Man” Jeff Crane, and Head Brewer, Liz Chism went about creating this beer in our latest blog post, Les Saisons Spring 2016 Release.

Release Date: Les Saisons will be released in the Tasting Room today, April 1^st(NO JOKE). We will have a keg on tap and bottles available for sale. The price per 750 ml bottle is $18, limit 4 per person.Here’s the 2017 version.
