About Jester King Brewery:
Jester King Brewery is a highly regarded craft brewery located in Austin, Texas, known for its innovative, farmhouse-style beers. Founded in 2010 by Jeffrey Stuffings and Michael Stewart, the brewery focuses on using wild yeast and bacteria in its fermentation process, creating a unique, natural flavor profile in its beers. This approach aligns with their commitment to producing “wild and funky” beers, often blending traditional brewing techniques with experimental methods.
Jester King is also known for using locally sourced ingredients, including Texas-grown grains, fruits, and herbs, to highlight the terroir (the environment) in their beers. Their beers are often spontaneously fermented or made with mixed cultures, which means they allow wild yeast and bacteria from the environment to influence the final product.
One of their signature styles is farmhouse ales, particularly saisons and sours, but they produce a variety of other styles, including IPAs and stouts. The brewery’s facility is set on a beautiful, 165-acre ranch, providing a rustic and scenic backdrop for the brewery. Visitors to Jester King can enjoy the brewery’s tasting room and food offerings, with a focus on local, artisanal ingredients.
Jester King has gained a loyal following for their creativity and the distinctiveness of their beers, which have won numerous awards and recognition in the craft beer community. They are considered pioneers in the Texas craft beer scene and are often regarded as one of the top wild and sour beer producers in the United States.
Jester King Brewery —
Location & Origins
Founded in 2010 by brothers Jeffrey Stuffings and Michael Steffing, Jester King Brewery is a celebrated Austin-area craft brewery specializing in wild-yeast fermented beers. It sits on roughly 40 acres about 18 miles west of downtown Austin, surrounded by scenic Hill Country terrain.
Brewing Approach & Philosophy
Jester King is best known for its creative farmhouse-style ales, barrel-aged beers, and wild fermentation techniques. They use open fermentation to harness local wild yeast and even source their well water from the property to imbue their beers with a distinct local character—truly embracing the concept of terroir.
They also age many of their creations in second-hand whiskey or wine barrels, allowing complex flavors to develop slowly over time.
Recognition & Awards
Named one of the Top 30 Breweries in the U.S. by VinePair, praised for its “wild and funk‑focused ales” and inviting ambiance.
Honored in 2019 as the #1 brewery in Texas by the inaugural Texas Craft Beer Report.
Expansion & Experiences
In 2016, the brewery expanded by adding an adjacent 58-acre plot, evolving into a 165-acre destination. The property now includes an event hall, a kitchen, an inn, and a working farm.
That growth paved the way for:
Guided Goat Walks and other farm-based experiences
Brewery & Farm Tours—ideal for exploring how the beer is made
Hosting events like concerts, weddings, and their own festivals
A kitchen serving wood-fired pizza, BBQ, and broadening menus rooted in Hill Country flavors
They also ventured into winemaking—planting a vineyard in 2018 and producing their own wines—and launched a multi-unit inn, the Tipping T, for lodging on-site.
Community & Events
One of their signature events is the Funk n’ Sour Fest, pairing Austin eateries with breweries, cideries, wineries, and distilleries in creative tasting collaborations.
They also celebrate milestones like anniversaries with events such as “Lager Fest,” featuring expansive beer lineups and live music.
