Crafting Innovative Bourbon Since 1997
Founded in 1997, Jefferson’s is the brainchild of Trey Zoeller and his father Chet, a famed bourbon historian. They continued a family whiskey tradition that goes back to Trey’s 8th generation grandmother who was arrested in 1799 for the “production and sales of spirituous liquors.”
Trey’s curious and experimental mindset has allowed him to push the boundaries of bourbon whiskey, upholding tradition while still searching for new possibilities.
Our Process
From bourbon aged at sea to unique experiments with wood, Jefferson’s Bourbon is constantly pushing the boundaries of bourbon whiskey by experimenting with cutting-edge aging techniques.

Jefferson’s Bourbon is a brand known for its experimental and innovative approach to bourbon whiskey production. Founded in 1997 by Trey Zoeller and his father, a bourbon historian, it draws on a family legacy of whiskey-making that dates back to the 18th century. Jefferson’s is particularly known for its unique aging techniques, including aging bourbon at sea and using various wood finishes.
Here’s a more detailed look at what makes Jefferson’s stand out:
1. Experimental Aging Techniques:
Jefferson’s Ocean Aged at Sea:
.This is one of their most well-known products, where bourbon barrels are aged on ships that travel the world’s oceans. The constant motion and changing climates are said to intensify the interaction between the whiskey and the barrel, resulting in a unique flavor profile.
Wood Experiments:
.Jefferson’s explores different wood types and finishes, including Pritchard Hill Cabernet Sauvignon casks and Cognac casks, to add complexity and depth to their bourbons.
2. Blending and Small Batch Production:
Jefferson’s bourbons are crafted in small batches, often blending straight bourbons of varying mash bills and ages.
This allows for a consistent quality while also creating opportunities for nuanced flavors to emerge in each batch.
3. Core Products and Variants:
Jefferson’s Reserve:
.A flagship bourbon known for its rich, complex flavor and smooth character.
Jefferson’s Small Batch Bourbon:
.An approachable and easy-drinking bourbon, suitable for both beginners and experienced bourbon drinkers.
Jefferson’s Ocean:
.Their signature aged-at-sea bourbon, available in various expressions like the cask strength version.
Jefferson’s Rye:
.A rye whiskey that may also be finished in different types of casks.
4. Historical Legacy:
Trey Zoeller’s family history includes a grandmother who was arrested in 1799 for producing and selling liquor, adding a unique historical dimension to the brand.
The brand’s exploration of bourbon’s history includes recreating the original voyages that brought bourbon from Kentucky to New Orleans and beyond.
