Today I have a brand new sour ale that will soon be making its debut from WeldWerks Brewing Co. in Greeley, Colorado. Known throughout the craft beer world for innovative small-batch releases, highly rated hazy IPAs, pastry-inspired beers, and creative flavor combinations, WeldWerks is preparing to release Last Scoop Neapolitan Sour Ale, a dessert-inspired fruited sour that looks perfect for fans of sweet treats and refreshing summer beers.

According to the brewery label, WeldWerks Last Scoop Neapolitan Sour Ale is a sour ale brewed with strawberry syrup, vanilla, chocolate, and milk sugar, creating a liquid interpretation of the classic Neapolitan ice cream experience. The beer will come in at a highly sessionable 4.1% ABV, making it an easy-drinking option for warm weather, brewery visits, cookouts, beer festivals, and casual drinking occasions.

The label artwork immediately grabs attention with its unique ice cream-inspired design. Featuring a scoop of Neapolitan-style ice cream with distinct strawberry, vanilla, and chocolate layers, the artwork perfectly reflects the flavor profile found inside the can. The playful imagery captures the nostalgic feeling of enjoying the last scoop of a favorite frozen dessert while showcasing the brewery’s creative approach to modern craft beer.

Based on the label details, this release falls squarely into the increasingly popular dessert sour category. These beers combine fruit flavors, confectionery-inspired ingredients, and balanced acidity to create drinking experiences that blur the line between beer and dessert. Last Scoop Neapolitan appears ready to deliver exactly that kind of experience.

The use of strawberry syrup should provide sweet berry character and vibrant fruit flavor. The addition of vanilla is likely to add smooth creaminess and dessert-like depth, while chocolate contributes rich confectionery notes that complete the familiar Neapolitan flavor trio. The inclusion of milk sugar (lactose) should enhance body and sweetness while helping replicate the creamy mouthfeel often associated with ice cream.

Unlike many heavily fruited sour ales that push alcohol content into higher territory, WeldWerks has chosen a modest 4.1% ABV. This lower alcohol content allows the flavors to remain approachable while creating a highly drinkable beer that begs for multiple pours. It is a smart choice for a dessert-inspired sour ale where flavor balance and refreshment are key.

The label also notes that this is a dialed-in beer, suggesting a carefully refined recipe designed to maximize drinkability and flavor integration. Consumers are instructed to “Keep Cold. Drink Now.” and “Rotate It Gently to Mix,” indicating that flavor components may settle in the can and benefit from gentle mixing before serving.

For fans of pastry sours, smoothie sours, fruited sour ales, dessert beers, and ice cream-inspired craft beer releases, Last Scoop Neapolitan is shaping up to be one of the more intriguing upcoming releases from WeldWerks Brewing. The combination of strawberry, vanilla, chocolate, and lactose creates a flavor profile that is instantly recognizable while still offering something unique within the crowded sour beer category.

The can label identifies the beer as a sour ale with natural flavors and certified color, demonstrating the brewery’s commitment to achieving the intended dessert-inspired experience. With its eye-catching artwork, approachable alcohol content, and nostalgic flavor concept, Last Scoop Neapolitan has all the ingredients necessary to become a popular seasonal release among craft beer enthusiasts.

As of now, additional release details, distribution information, availability, and launch timing have not yet been announced. The beer will be packaged in 16 oz cans, and fans of WeldWerks Brewing should stay tuned for additional updates as more information becomes available.

Founded in 2015, WeldWerks quickly established itself as a major force in the American craft beer scene. The brewery earned widespread recognition through its award-winning hazy IPA program, particularly the legendary Juicy Bits IPA, which remains one of the most sought-after New England style IPAs in Colorado craft beer.
