The Bruery Portified & Cacao Disposition 2027 Imperial Stouts

The Bruery has two serious imperial stouts lined up for 2027, and neither one looks like a beer for casual sipping. The Placentia, California brewery is preparing Portified, a port barrel-aged imperial stout finished in French oak puncheons with Syrah grapes, and Cacao Disposition, a bourbon barrel-aged imperial stout made with cacao nibs. One comes in at a massive 19.8% ABV. The other reaches 14.9% ABV. Both are packaged in 12.7-ounce bottles, and both bring the kind of barrel-aging and specialty ingredients that have helped make The Bruery a familiar name among fans of big, complex, limited-release beers.

The Bruery Portified is the one that immediately catches the eye, partly because of that 19.8% alcohol level and partly because its finishing process goes beyond the usual bourbon barrel treatment. The Bruery describes the beer as a port barrel-aged imperial stout, with 16 months of barrel aging, finished in French oak puncheons with Syrah grapes.

The label identifies it as a Portified port barrel-aged imperial stout finished in French oak puncheons with Syrah grapes, brewed and bottled in Placentia, California. There is a lot happening here: dark roasted malt, the potential richness of port wine barrels, oak character and the fruit influence associated with Syrah grapes. The exact tasting notes have not been released yet, so the final balance between roast, wine-like fruit, oak and sweetness remains to be seen.

Big beer. Bigger ambition. The Bruery Cacao Disposition

The second release, The Bruery Cacao Disposition, takes a different route, leaning into the familiar combination of imperial stout, bourbon barrels and cacao. The label describes The Bruery Cacao Disposition as a bourbon barrel-aged imperial stout with cacao nibs, coming in at 14.9% ABV and packaged in a 12.7-fluid-ounce bottle. The supplied release information identifies Elijah Craig bourbon barrels and TCHO Ghana cacao nibs as part of the beer’s recipe, adding a specific origin to the chocolate ingredient.

Cacao nibs can contribute deep cocoa character without simply making a stout taste like a sweet chocolate dessert, while bourbon barrel aging can bring notes associated with whiskey, toasted oak, vanilla and caramel. Those are reasonable expectations for this style, not confirmed tasting notes for this particular release.

The two beers show how differently The Bruery can approach the imperial stout category. The Bruery Portified pushes toward port wine barrel character, French oak and Syrah grape influence, with an alcohol level that places it among the stronger barrel-aged stouts on the market. The Bruery Cacao Disposition stays closer to the bourbon barrel-aged imperial stout tradition but gives the recipe a focused cacao component. Neither beer is likely to be mistaken for an everyday stout, and the smaller 12.7-ounce bottle format makes sense for releases with this much alcohol and intensity.

For collectors, the appeal is also in the details. The Bruery Portified label has a restrained cream-colored design, with the beer name set in bold lettering and a description that clearly spells out the port barrel aging and Syrah grape finish. The Bruery Cacao Disposition goes in the opposite visual direction, using a dark label with glowing copper and gold tones that suggest the richness of bourbon barrels and cacao. Both labels identify The Bruery in Placentia, California, tying the releases to the brewery’s established Southern California home.

The Bruery has not yet provided full release dates, pricing or official tasting notes for these 2027 editions, so those details remain pending. For now, The Bruery Portified and The Bruery Cacao Disposition are two upcoming bottles worth watching for fans of barrel-aged imperial stout, high-alcohol craft beer and specialty releases built around wine barrels, whiskey barrels and carefully selected ingredients. More information should help clarify availability as the 2027 release window approaches.

The Bruery is an experimental craft brewery based in Placentia, California, known for barrel-aged imperial stouts, Belgian-inspired ales and specialty beers that push beyond conventional brewing styles. Founded in 2008 by Patrick Rue, the brewery built its identity around creative recipes, unusual ingredients and extended aging in wine and spirit barrels. Rather than concentrating exclusively on traditional lagers and approachable pale ales, The Bruery developed a following among craft beer enthusiasts interested in complex, limited-release beers with distinctive flavors and elevated alcohol content.

One of the brewery’s defining characteristics is its approach to barrel aging. The Bruery uses barrels previously associated with bourbon, whiskey, wine and other spirits to develop additional layers of flavor in its beers. Depending on the recipe and aging process, these barrels can contribute notes of vanilla, oak, caramel, dark fruit, toasted wood and roasted malt. The brewery’s imperial stouts are particularly well suited to this approach, providing a rich foundation that can stand up to long aging periods and ingredients such as cacao, coffee, fruit and spices.

Black Tuesday is among The Bruery’s best-known beers and has become an important part of its reputation for high-gravity imperial stouts. The beer has also served as a foundation for numerous variants, giving the brewery opportunities to explore different barrels, ingredients and finishing techniques while retaining the basic appeal of a powerful stout. Releases such as Portified continue that tradition, with a port barrel-aged imperial stout finished in French oak puncheons with Syrah grapes. At 19.8% ABV, Portified represents the brewery’s interest in combining substantial alcohol strength with more specialized barrel and fruit influences.

Cacao Disposition takes a different approach to the imperial stout category. This 14.9% ABV bourbon barrel-aged imperial stout features cacao nibs, with the supplied release information identifying Elijah Craig bourbon barrels and TCHO Ghana cacao nibs. The combination brings together a stout base, whiskey barrel aging and a carefully selected chocolate ingredient. While official tasting notes have not yet been announced for the 2027 edition, the recipe places the beer squarely within The Bruery’s tradition of dessert-inspired, barrel-aged specialty releases.

The brewery’s interest in experimentation extends beyond imperial stout. Through its broader portfolio, The Bruery has explored sour and wild ales, Belgian-inspired recipes, fruit-forward beers and hop-driven releases. Its associated brands have helped serve different parts of the craft beer market, with Bruery Terreux historically focused on sour and wild beer production and Offshoot Beer Co. specializing in hoppy beers, including IPAs. This wider range allows the organization to approach different styles with distinct brewing identities while maintaining an emphasis on creative recipes.

Limited releases and membership programs are also an important part of The Bruery’s business. Its Preservation Society offers members access to curated beer releases, discounts and other benefits, while special releases give collectors opportunities to explore beers that may not remain available for long. Bottle formats are common for many of its stronger barrel-aged beers, making it easier for consumers to share them or enjoy smaller pours. The brewery’s tasting room in Placentia provides another way for visitors to experience its beers and explore new releases.

The Bruery has continued to develop beers that appeal to drinkers interested in more than a standard pint. Its recipes frequently combine familiar foundations with unexpected ingredients, whether that means aging an imperial stout in spirit barrels, introducing fruit into a finished beer or building a recipe around chocolate and other dessert-inspired flavors. This approach has made the brewery a recognizable name among fans of barrel-aged beer and experimental craft brewing.

Portified and Cacao Disposition extend that philosophy into the 2027 release calendar, offering two distinct takes on high-alcohol imperial stout. Portified emphasizes port barrel aging, French oak and Syrah grapes, while Cacao Disposition combines bourbon barrels and cacao nibs. Release dates, pricing and official tasting notes remain pending, but both beers reflect The Bruery’s established interest in complex recipes and specialized aging techniques.
