The arrival of fresh hop season is always a major event in the Pacific Northwest, and Von Ebert Brewing is ready to celebrate with two fresh takes on some of its most recognizable IPAs. The Portland brewery is preparing Fresh Hop Volatile Substance NW IPA and Fresh Hop Sector 7 Hazy IPA, bringing locally grown, freshly harvested Northwest hops into two established Von Ebert favorites. These releases can be categorized as a true ‘Von Ebert Brewing fresh hop IPA’ experience. Additionally, the excitement around the Von Ebert Brewing fresh hop IPA is palpable among craft beer enthusiasts.

Fans eagerly await the chance to enjoy the new Von Ebert Brewing fresh hop IPA releases, as they represent the pinnacle of seasonal brewing.

With the introduction of the new Von Ebert Brewing fresh hop IPA, beer lovers can expect a unique flavor profile that highlights the quality of locally sourced hops.

The new releases also arrive as Von Ebert continues its rapid production and distribution expansion. With its North Mississippi brewing facility dramatically increasing potential production capacity, the brewery is growing beyond its Portland roots and sending more of its award-winning lagers and ales throughout the Northwest, Colorado, California, and Japan.

A spin on their classic offerings, Von Ebert Brewing will brew fresh hop versions of Volatile Substance NW IPA and Sector 7 Hazy IPA

PORTLAND, Ore. — This week, Von Ebert Brewing will release its first fresh hop beer of the season to celebrate Northwest breweries’ favorite time of year.

“We’re lucky to be in the Northwest making beer where nearly all of America’s hops are grown. This geographic advantage allows us to celebrate fresh hops in a way other breweries can’t. We’re also able to partner with local hop growers right in our backyard,” said Sam Pecoraro, brewmaster of Von Ebert Brewing. “At Von Ebert Brewing, we’re proud to have evolved our traditional beer offerings with fresh hop varieties from our partners at Coleman Agriculture and Perrault Farms.”

Von Ebert Brewing will first release Fresh Hop Volatile Substance NW IPA highlighting Simcoe hops from Coleman Agriculture. Volatile Substance NW IPA is known for its flavors of smashed berry, sticky pine resin and sweet citrus. In mid-September Von Ebert Brewing will also release Fresh Hop Sector 7 Hazy IPA highlighting Krush hops from Perrault Farms.

Sector 7 Hazy IPA has notes of ripe pineapple, ruby red grapefruit and sweet green melon. These fresh hop beers will be available at Von Ebert Brewing locations as well as with Northwest bars, bottleshops and grocery stores in both 16-ounce cans and draft until supplies last.

Beer drinking visitors at all three Von Ebert Brewing locations can also purchase 20-ounce mugs of gold medal winning Clubhaus Lager for $3 all day, every day. And at the N. Mississippi location (825 N. Cook Street), traditional Volatile Substance NW IPA is available for just $5 between noon to 5 p.m., Monday through Friday. Von Ebert Brewing also now offers non-alcohol hop sparkling waters, hard seltzers, hard punches and hard teas for those who don’t drink beer.

The new brewing facility off N. Mississippi allows Von Ebert Brewing production and distribution to go from 4,000 barrels per year to as much as 20,000 barrels per year and it’s more than halfway there adding new offerings. Von Ebert Brewing now sells more of its products in 12-ounce and 16-ounce cans and expanded its distribution throughout Oregon, Washington, Colorado, California and Japan.

Von Ebert Brewing was founded in 2018 by Tom M. Cook and Tom S. Cook in Portland, Oregon. Von Ebert Brewing is named after the family matriarch lovingly referred to as “Grandma Ebert.” The quintessential immigrant story, Grandma Ebert came to America from Germany via Ellis Island and relied on her grit and determination to create a successful life for her family here in the states.

In that vein, the brewery has displayed those same traits and gained success through numerous World Beer Cup medals: 2026 Silver and 2025 Gold American Light Lager with Clubhaus, 2023 Gold German-Style Pilsner with Pils and 2024 Bronze Vienna Lager. Our moniker celebrates Grandma’s tenacity and honors our heritage. Von Ebert translates loosely to “House of Ebert” or in full English, “House of the Boar.”
