The brewery bought this filter (pre-owned!) in the early 1900s, and it’s still in use today. Here you’ll see Jean piping some cellulose into a mold, pressing it, and loading the cartridge into the filter. There are six cartridges total, and each of them has to be made every time the brewery filters a beer!
Dedicated to all those people who wonder why there isn’t enough Cantillon to go around.…
