Fall Allen, Sean Paxton and Pete Slosberg were in Brazil exploring the variety of Amazonian

ingredients.

The Amazon Beer is a brewery born in Belém, city located in Northern Brazil, and its specialty

consist in making some of the most awarded crafted beers in the world. The success of the

beverages produced by this Brazilian brewery is responsible for bringing hundreds of people to

Estação das Docas, a big leisure complex with pubs and restaurants, and one of the most

visited touristic spots in Belém.

Recognized by the excellence in craft beer making,

Amazon Beer invest continually in researches to improve

their products and also to develop new beer labels,

always having as its raw materials the ingredients found

in Amazon Forest.

In order to check all the Amazon Beer production details,

Fall Allen, Pete Slosberg and Sean Paxton, some of the

world greatest beer experts, traveled to Belém to know

the Amazon Beer factory. Besides that, they had a very

special mission to accomplish: create a totally new beer

flavor, with an Amazonian ingredient, of course. Their choice would bring to life a collaborative

beer, idealized by the team, and produced by the Brazilian brewery.

With explorer and curious spirits, they were super excited to find out all the kinds of

Amazonian ingredients. To do that, Caio Guimarães and Arlindo Guimarães, Amazon Beer

owners, led the experts in a mini-tour over the Ver-o-Peso Market. Located in the historical

area of Belém, “Veropa”, as it’s called by the local people, is the biggest open air market in

Latin America.

Pete Slosberg, the “Wizard of Beers” and one of the pioneers in New American Brewing

School, was impressed by such diversity. “It’s bigger and better than anything you can imagine.

I’ve never seen this variety, it’s extraordinary! I’m really lucky to be here.”

The renowned chef Sean Paxton, who stands up for the experimental use of beer in

gastronomy, was delighted. “[There are] So many different things. The market itself, the

energy, people walking around. This is really fascinating! I’m very excited to be here, it’s a lot

of fun.”

The singular profile of Ver-o-Peso Market also conquered Fall Allen, head brewer of Anderson

Valley, a North American craft beer company. “I think the market is great! We don’t have these

kinds of markets in the US. Sadly, they’re very rare. I lived in Singapore for five years, where

they have markets similar to this, but not with this much variety. It’s great. You guys are very

lucky to have markets like this, open markets where you still can get fresh products, like fishes

and that kind of thing.”

Among so many fruits, herbs, aromas and flavors, one particular ingredient captured their

attention: the Puxuri seeds. This seed is also known as “Smell of Angels”, because of its

irresistible aroma. So the group decided to use the puxuri seeds to develop an aromatic beer.

But, in order to better understand how the puxuri is presented in nature, the ‘dream team’

went inside the forest and collected, themselves, the puxuri seeds. The direct contact with

Amazonian flora and fauna was an unique experience, and all the collected material was taken

to Amazon Beer factory.

They agreed to make a Saison beer style, which is characterized by a strong aroma. “We

prepared the beer to put it into the fermenters. After that we’ll have to wait a few days to

conclude the fermentation process, but I think this beer with puxuri flavor is going to be

fantastic!”, said Fall Allen.

A few days later the beer was ready, and it was time to try it out. The result: everybody loved

it! “This was fun because to do a saison style in the jungle, when you think about the heat, the

humidity, you think about the effects in your body… And this was a beer that I’d really wanted

to have. I’m really proud of it, I think it will be great with food as well”, chef Sean Paxton said.

“Such a great time to come to Belém and work with Amazon Beer. I loved their beers, they

know how to make perfect beers with just a right amount of material from the jungle. And it’s

cool to be able to make a beer with them. This is just amazing aroma and flavor”, Pete Slosberg

said about Saison Puxuri.

“It’s very exciting to be here in Belém making beers with Amazon brewing. And the Puxuri

Saison I think it’s fantastic, I loved it. These ingredients from the jungle they’re using, the

aroma is very unique, beautiful, light, subtle. I think this is going to be a great beer”,

commented Fall Allen.

Caio Guimarães and Arlindo Guimarães, Amazon Beer owners, were completely satisfied with

the visit outcome. “This Puxuri beer really turned out to be fantastic. This is the result of our

partnership with Valley, Slosberg and Paxton, great professionals from the beer business. And I

am sure that more professionals will come to make new flavors with our local ingredients”,

Caio bets.

“We are very happy to host so many relevant professionals from the North American beer

business and we are even happier to achieve this amazing outcome. This new flavor is going to

become a hit. Not only in Brazil but in the entire world”, completes Arnaldo.
