Jester King & Birds Fly South Collaborate On Keel Cut Foudre-Aged IPA

We’re pleased to introduce KEEL CUT FOUDRE-AGED IPA, a collaboration with Bird’s Fly South Ale Project!
To create Keel Cut, we brewed a resinous, pillowy IPA with malted barley and malted oats from TexMalt, then fermented it in one of our oak foudres with our mixed culture of native microflora. We then let the beer age for about four months in the foudre to allow the microflora to create new flavors and transform the hop compounds. Finally, we finished it with an aggressive dry-hop of bright, tropical Australian Vic Secret before canning it!
Keel Cut is our first mixed fermentation beer released in cans! It was canned today (01.21.21) and is available to drink at Jester King or take to go (https://jesterkingbrewery.com/). Sixteen-ounce four-packs are $16. We have about 200 cases available. No purchase limit. Proxies welcome. Unfortunately, no shipping or delivery under TX law!
