About George Dickel:
George Dickel is a popular brand of Tennessee Whiskey, named after German immigrant George Augustus Dickel (1818-1894), a prominent Nashville liquor distributor who started selling whiskey in the 1860s and whose name became synonymous with the Cascade Hollow distillery’s product, known for its unique “Lincoln County” charcoal mellowing process using sugar maple, cool fermentation, and aged in one-story warehouses. Owned by Diageo, the brand uses a “whisky” spelling (without the ‘e’) and offers various expressions, continuing a tradition of handmade quality despite historical challenges like Prohibition.
The Man: George A. Dickel
Origin: Born in Germany, immigrated to the U.S., settled in Nashville, and built a successful liquor wholesaling business.
Role: While not the original distiller, his company distributed the whiskey, and his name was put on the labels after his death, a tradition continued by his partners and later owners.
The Distillery & Whiskey
Location: Cascade Hollow, near Tullahoma, Tennessee, using spring water from the area.
Process: Cools distillate to 40°F before filtering through sugar maple charcoal, a unique variation of the Lincoln County Process.
Style: Uses a traditional mash bill (84% corn, 8% rye, 8% malted barley) for expressions like the Signature Recipe (formerly No. 12).
Spelling: Adopts the Scottish “whisky” spelling, reflecting a desire to rival fine Scotch whiskies.

Born 40 years after the signing of the Declaration of Independence, George A. Dickel was an established Nashville merchant when he entered the whisky business. Dickel grew his reputation for selling the smoothest, most mellow spirits in the region. Thus, Geo. A. Dickel & Co. was born and when the Cascade Hollow Distillery opened in 1878 in neighboring Coffee County, George Dickel bought a large share.
Born from a belief that whisky made in the winter months produced a mellower sip, our liquids were always chilled to 40 degrees before charcoal filtering for a smooth yet complex taste.
Since the very beginning, our unique spelling of ‘whisky’ without the ‘e’ speaks to the passion from which our brand was born. A drive to rethink American whiskey and elevate the experience to rival the world’s finest scotch whiskies. To this day, we continue the tradition of bringing new perspectives to our liquid legacy.
